Next, enjoy fresh sashimi that reflects the beauty of the season. We import the best fish from Japan weekly and prepare each cut with expert precision. Sometimes served salad-style, this course highlights the balance between natural flavor and thoughtful presentation.
The centerpiece of the meal: hassun, a vibrant arrangement of small seasonal bites. Each dish is crafted to reflect the time of year, both in flavor and appearance. From the colors to the plate itself, everything is designed to bring joy to your senses.
Here, we slow the pace with a gentle dish—either a cool hiyashihachi or a warm, comforting onmono. Selected based on seasonal ingredients, this course offers a quiet, calming moment in your dining journey.
Our main course brings together Japanese ingredients and French-inspired techniques. This is where tradition meets creativity—where rich flavors, beautiful plating, and a touch of surprise come together in harmony.
The final savory course is a simple rice dish, such as sushi or ochazuke. It’s light, aromatic, and designed to bring balance and closure to your meal—an elegant return to the roots of Japanese cuisine.
We end with a handcrafted seasonal dessert and freshly prepared matcha, made in front of you. The quiet ritual of tea, the sound of water, and the scent of matcha create a serene conclusion to your experience.
